The santoku knife, also known as a Japanese cook’s knife, has grown in popularity in recent years, and is a recent addition to the Thiers Issard range. Oval indentations in the blade (known as alveoles in France) aid in slicing through sticky foods. The ears of the bolster have been eliminated to provide a cutting surface that runs the full length of the blade.
